Scrumptious Bread recipe that needs no yeast or eggs. We developed this recipe during quarantine on 2020 when we were out of eggs and yeast. The bread turns out to be immensely satiating. We paired it with piping not Shakshuka and it was delicious.
Ingredients
To make this super easy and delicious recipe, you will need the following ingredients. It is important to measure these by weight, not by volume.
1. Whole Wheat Flour: 180 gms
2. AP Flour: 142 gm
3. Baking Powder: 2 Tbsp
4. Baking Soda: 1/4 Tspn
5.Yogurt: 6 oz or 170 gm
6. Milk: 8 oz or 225gm
7. Neutral Oil: 4 oz or 115gm
8. Salt: 1/4 tspn
9. Rolled Oats: 3 oz or 85gm, see step 1 if you are using instant oats.
10. Honey: 1.5 oz or 45gm
Steps:
If using instant oats, strain them. This will remove all the added ingredients such as milk powder. You may also need to hand-pick other ingredients like cranberries or nuts if they are present in the oats you are using.
Out of the yogurt you have measured, take about 1 tbsp. and save it for later. Add the rest of it along with all of the milk, oil, and honey to a large bowl. Whisk thoroughly to combine. Add the oats to this and let it soak for a minimum of 40 minutes. But don't go over an hour.
Prep the baking tin by lining it with parchment.
When 30 minutes have passed since you soaked the oats, it is time to preheat the oven to 375F.
With the 1 tbsp. yogurt that was saved for later, mix all of the baking soda, baking powder, and salt. Add a tbsp. of water and whisk to combine. Leave it for 10 minutes.
In another bowl, sift or whisk AP flour and wheat flour to remove lumps.
Combine the soaked oats into this. Mix well to avoid dry spots.
Now, add the baking powder and yogurt mixture to this and mix with a light hand. Use a folding motion instead of rigorous mixing.
Transfer to baking tin and bake for about 50-55 minutes at 375F.
Let it cool before cutting into it. Store in an airtight jar for about a week.
