Kadai Masala - The Indian spice mix you can use with any dish

Kadai is the Hindi word for wok. Any dish that is made in a Kadai can be named "kadai". So, you might have seen Kadai Chicken, Kadai Mushroom, Kadai Paneer in restaurants around the world.



This post showcases home-made Kadai Masala or Karahi Masala from a fresh batch of dry roasted whole spices.

This spice mix is packed with flavor and is very aromatic! My kitchen cabinets smell of kadai masala for days every time I make a fresh batch of this!


The idea behind Kadai Masala is to make a quick, coarse powder with whole spices on hand. Over time, the flavor and spice combination of a 'kadai' dish have become synonymous to a mix of whole spices that we have featured in this video. But, like with any spice mix, you can alter the ingredients to create a masala that suits your palette.



You can use this #kadaimasala for any recipe- vegetarian, chicken, lamb, egg, or fish. If you're using this for fish based recipe, add in a tsp of fennel powder for every half kilo of fish.


Let's talk about the ingredients now.


These measurements will give ~45 gm of the #kadaimasala. You can size up the recipe how ever you want and can also make in bulk and store in the freezer in an air tight ziplock for up to a year.


Ingredients:

  • Green cardamom: 8-10 pc

  • Black peppercorn: 30 pc or 1/2 tbsp

  • Black cardamon: 1 pc

  • Bay leaves: 2 pc

  • Dried red chilies (Arbol) : 2 pc

  • Coriander seeds: 1 tbsp

  • Cumin seeds: 1/2 tbsp


Steps:

  1. Measure all ingredients.

  2. Heat a dry pan on medium. When the pan is hot, roast the whole spices on medium heat.

  3. Keep the spices moving constantly by either shaking the pan or use a spoon or Silicone brush.

  4. Roast until the spices are fragrant.

  5. Remove on a plate and let cool slightly.

  6. When the spices have cooled a bit, break the bayleaves into smaller pieces for ease of grinding.

  7. Grind all the spices together. Usually this masala is a coarse powder but you can make it finer if that is what you prefer.

  8. Store in an air tight jar and use as needed.
