Pickled Red Onions are a perfect condiment to any dish. Add these to hotdogs, burgers, or eat with a bowl of rice and lentils – a.k.a dal chawal in Hindi. Or you could also try these with our recipe of Summer Rolls that are refreshing, easy to make, and perfect to serve as finger food.
Ingredients:
1. Red onion: Medium size, one – cut into thin slices
2. White Vinegar: ½ cup – we used distilled 5% white vinegar
3. Water: ½ cup
4. Salt: 2 tablespoons
5. Sugar: 2 tablespoons
6. Crushed Red Pepper: ½ teaspoon
7. Mustard seeds, black: 2 teaspoons (You can also use yellow mustard seeds)
8. Cinnamon stick: Medium size, one
9. Coriander seeds: 1 teaspoon
10. Cloves: 2-3 pieces
11. Star Anise: 1-2 pieces
You will also need one air-tight glass jar.
These pickled onions are good in the refrigerator up to 3 weeks. Leftover liquid can be re-used up to two times if it is kept clean from other food particles.
