This veggie burger/sandwich or aloo tikki burger (potato patty burger) is your fix for vegetarian indulgent food. A good burger or a sandwich can cure all your blues - be it hangover blues or quarantine blues. This fantastic vegetarian recipe is easy to make and does not need a truck load of ingredients.
All my Indian readers must know of the famous Aloo Tikki burger that McDonald's offers in India. This recipe is not trying to replicate the McDonald's recipe, but this one is surely going to be a fix for Indian street food cravings. Crisp golden potato patties sandwiched in burger buns and then topped with tomatoes, red onion, and mayo, mustard and ketchup.
Ingredients
Here is what you will need:
1. Burger buns: 4 ea.
2. Potatoes, boiled and mashed: 2 medium size
3. Red onion, cut into rings and also finely chopped: 4 rings and 2 tbsp. chopped
4. Tomato: Cut into slices
5. Thai Chili, minced: 2 *adjust quantity for desired heat.
6. Ginger, minced: 1 inch
7. Garlic, minced: 2 -3cloves
8. Breadcrumbs: 4 tbsp. plus extra 4 tbsp. to coat the patty
9. AP flour: 2 tbsp. to make slurry + 2 tbsp. to coat the patty.
10. Shredded Cheese, any kind: 4 tbsp.
11. Parsley or cilantro, chopped: 2 tbsp.
12. Salt/ pepper: to season
13. Ketchup, mustard, mayo: for the assembly
14. Oil to pan fry the patties, about 4 tbsp.
Steps
Prep the ingredients as per the list above. This includes slicing and chopping onions, slicing tomatoes, mincing green chilies, garlic, ginger, and parley, and boil potatoes.
Keep the sliced onions and tomatoes aside. These are used to assemble the burger.
Once the potatoes and cooked and cooled, mash them. You can use a potato masher, or a potato ricer. If you don't have either, just mash it using your hands.
With the mashed potatoes, mix in minced green chilies, ginger- garlic, chopped red onions, parsley, 4 tbsp. bread crumbs, and cheese. Season with salt and pepper. Mix it thoroughly to incorporate all the ingredients together.
Divide the potatoes into 4 equal parts and shape them into round patties.
Using 2 tbsp. of AP flour, make a slurry with 2 tbsp. of water. Keep the other 2 tbsp. of AP flour to coat the patties.
Season the dry AP flour and slurry with salt and pepper.
One by one coat the patties with dry flour first, then with slurry, then with bread crumbs. Meanwhile, also keep 4 tbsp. of oil to heat in a pan.
Once the oil is heated, carefully drop the patties in the pan and cook till golden on both sides. The patties are cooked already, so all you need to do is make the exterior crispy. Remove on paper towels.
In a separate pan, heat butter and toast the burger buns. If you like, you can also do this on a toaster and butter the buns after toasting.
To assemble, smear ketchup, mayo, mustard on the bottom bun. Layer tomatoes, then patty, then red onion, then the final burger bun top.
Serve hot. You can pair it with our boozy milkshake!
